Peruvian cuisine is considered one of the most diverse in the world, thanks to Pre Inca, Inca, and Spanish inheritance. Chef Anthony Verastegui is a pioneer in the Peruvian Food movement in Miami and welcomes you to try his fantastic menu.
He studied at le cordon bleu in Peru in 2001. Then he moved to Miami in 2006, where he started working in restaurants in the front of the house in all positions. In 2012 he opened Aji Carbon, where he applied all his passion and knowledge for cooking which comes from his father and his maternal grandmother that also cooked very well. She is the one that teaches him the traditional Peruvian kitchen.
In 2016 he went to San Sebastian, Spain. Where he got his master’s degree in chemical and molecular cuisine at the culinary center at the same time, he took advantage, and he did his internship at Akelarre restaurant with 3 Michelin stars.
He returns to Miami and opens the Aji carbon sunny isles.
2018 he went to Brazil to give consultancy for some restaurants and implement a menu in 4 restaurants.
After Brazil, he went to Portugal to give consulting for another restaurant.
Now he is about to open a new aji carbon in Aventura and in about two months a new concept of cevicheria bar @barracallao where people will be able to find ceviches as you eat it Peru markets.
